Game & Venison
During the game season as detailed below, processing of Game includes Grouse, Wild Mallard, Partridge and Pheasant. Pigeon, Rabbit and Hare are available throughout the year.

Traceability is key and ensuring that Estates and Gamekeepers we work with are legally certified trained hunters, abiding to the seasons and that they protect the welfare of the animals and their natural habitat.

We collect Pheasants, Partridge, Grouse and Mallard from Estates throughout Scotland. These are then brought back to our processing factory, and working in accordance with FSA (Foods Standards Agency)  for quality and standards. We process to the requirements of our customers, whether its oven ready, long legged or breast meat, we accommodate the various finishing styles and packaging required.

Our locally employed team have extensive training to ensure consistency and high standards of processing throughout the season (even at its peak in November/December) to maintain high  quality standards of finished products.

GAME & VENISON

Venison is fast becoming the food of the moment with chefs everywhere extolling the virtues of this tasty, healthy, versatile meat. Thanks to a successful campaign, most quality restaurants now include at least one venison dish on their menus with television cookery programmes featuring it regularly. Scottish venison is sold throughout the UK and Europe, the industry, including deer management, is worth £105m to the Scottish economy per annum and accounts for over 2500 jobs. The sheer Scottishness of the product, with images of deer roaming the highlands and the spectacle of the Monarch of the Glen, is helping to fly the flag for Scotland.
