Class Descriptions


Day Classes

Our classes begin at 10am. On your arrival you will be served with tea and coffee; this is the perfect opportunity to meet the rest of the class.

We provide all the ingredients you need, and apron and a course folder with recipes; all you need to bring along on the day is yourself.

Throughout the day you will be sampling all of the dishes you have made. And then at lunchtime you will have the chance to eat with the chef and the rest of the class relaxing with some wine in our beautiful dining room.

At the end of each class we will give you a bag for life to take away with you. Please remember to wear comfy shoes!

Day classes cost £130 each. However, if 2 book together it is only £100 each!


 Fusion Cooking

Simple Chicken Salad prepared at the Cook SchoolEast meets West on this culinary day! Packed full of recreating the wonderful flavours of Thai or Chinese cuisine. This class will allow you to experience and taste the fragrant and vibrant ingredients that are essential to create any Fusion cuisine.


 Fish and Shellfish

Fiesta Of Fish A day for fish lovers! We will take you on a journey from boat to plate. With fish being such a versatile ingredient learn how to fillet, cook and sauce with confidence. We will show you a range of cooking techniques, whether it is steamed, pan fried, or oven roasted; we have a recipe for you. Shellfish is often seen as a tricky ingredient for the amateur cook, we will teach you what to look for when buying your shellfish and how to transform it into some wonderful and tasty dishes.

 Taste Italia

Pasta Masterclass Italian food has some of the tastiest, freshest ingredients and flavours which is probably why it has an established place in our daily diet. Cooking to the seasons is what the Italians do best, so we will show you how to follow the seasons and create some Italian classics from risottos, grilled meats, simple pasta and much more.

 Friends For Dinner

Friends For Dinner A relaxed approach to entertaining at home. Take the stress out of those dinner parties. With fantastic menu ideas we will show you how to wow your guests and still enjoy your evening.


 Curry Day

Curry Day Everybody wants a recipe for a good curry. We will give you several including chicken, lamb, fish and vegetable. This class can be taken during the day or at night.


 Poultry / Red Meat

A full on day for meat lovers. Learn to cook classic, dinner party or homely fantastic dishes using red meat or a range of poultry. Learn how to source and what to look for when buying your produce. With a little something you’ve cooked during your day to take home, you will leave enthused and inspired!

 Glorious Game

Glorious GameLearn new and classic techniques and dishes using Scotland’s larder of wild game. Ranging from partridge, mallard, pheasant and venison.

 Market Kitchen - Eat The Seasons

What a treat it would be to try unique dishes which reflect seasonality. This class provides you with dishes which highlight the very freshest and tastiest seasonal produce. Each month we will focus on food in season and share all our tips, techniques and trade secrets with you. Come along and stay informed of the foods that are best now!

 The Modern and Contemporary Vegetarian

The ideal class for the 21st century vegetarian who enjoys inspirational, healthy vegetarian cookery. Sometimes perceived as a bland and boring option, we will show you how to put the WOW factor into vegetarian cooking!

 Mediterranean

Learn to utilise some of the most vibrant and freshest ingredients from some of the most exciting areas of the Mediterranean. This class incorporates some traditional and new ideas in Mediterranean cuisine such as Paella, Bouillabaisse, Duck Confit, Tagines, to name a few. Both ingredients from both land and sea which are all readily available.

Evening Demo and Dine Classes

These evenings are demonstration and dine only and generally start at 6pm. Relax with a glass of wine before going through to our state-of-the-art kitchen and watching one of our top chefs in action. Just think of the tips, techniques and trade secrets you'll pick up! You'll then get the chance to sample the mouth watering dishes in the luxurious surroundings of our dining room.

The evening should end around 9pm.


 Tapas

Tapas Night Tapas originated in Andalucia and the dishes are now a popular way to dine and to use when entertaining.


 Simple Suppers

Simple Suppers After a hard day at work the last thing you want to be doing is cooking a complicated dish for dinner. Come along to our simple suppers night to see how to take the pressure off cooking. We will demonstrate simple, fresh and tasty suppers with as little fuss as possible!

 Italian Night

ItalianNight Italian food has some of the tastiest, simple and freshest dishes on the planet. Cooking very seasonally is what the Italians do best, so we will show you how to follow the seasons and create some Italian classics from risottos to grilled meats to simple pasta and much more.


 Curry Night

Curry Night Similar to the Curry Day, the Curry Night will entail demonstrations of various curry dishes. Some people may find it difficult to make their own curry dish, we will show you how to make a curry dish with chicken, lamb, vegetables or fish effortless.

 Stocks And Sauces

Leave the Bisto in the cupboard! Have you ever wanted to learn how to make fantastic stocks and sauces? From deglazing roasting pans for a simple jus, or reductions for rich and intense sauces. See how easy it is to make your favourite sauces at home including: Peppercorn, Hollandaise, Mushroom, Diane and Red wine sauce.

 Soups

Learn to make some original and innovative soups from winter warmers to summer delights. Utilizing every day supermarket ingredients to create fantastic tasting soups for all for all the family too enjoy lunch or dinner.

 Bread

Curry NightPassionate about fresh bread? So are we!! Learn to make simple and easy doughs and breads for every occasion, learning some useful tips this step by step demo will demonstrate some classic breads from focaccia, panto follo, pizzas, rolls and bloomers.

'Fork Out Less' Classes

Why not try our new bitesize class, sessions run on a Friday between 10am & 12.30 and 2pm & 4.30pm. Welcomed with Tea or Coffee on arrival, our chef will then demonstrate the dishes, then its back to the workstation to re-create what you’ve just seen. You will have the opportunity to make bread and create your main course and pudding to take away. This bitesize class offers a taster of what our school has to offer at a budget cost. We’re confident that you’ll learn new skills and will be more confident to WOW your friends at your next dinner party. You will also receive a bag for life and the recipes from the class.


 Fork Out Less
